Kopi Luwak is the world's most expensive coffee. It is also known as coffee alamid or civet coffee. It is made from droppings of civet cats. These cats select and eat ripe coffees. It is believed that digestive juices degrade beans' proteins to amino acids that contribute to its unique flavor during roasting. The coffee is also less bitter because it begins to germinate inside civet stomach.

Its hard to gather civet droppings in a wide coffee farms. Some farmers engaged in raising civet cats to produce more coffee alamid. Civet cats are fed with ripe coffee beans. Droppings are collected, washed and dried.

If you want to engaged in civet coffee production. You probably want to roast your own coffee. It cannot be roasted in commercial roasting machine because such equipment has high volume capacity. Your precious coffee will get burnt in no time. Getting a two kilogram capacity drum roaster is a great idea but it might be too expensive. On the other hand, there are cheaper alternatives.

1. The common thing to all coffee roasters is heat. Basically, roasting is get done through heating. Now is the time to get your frying fan. Roast a measure amount of coffee over a low fire with continuous stirring. Slow roasting over a low fire is more controllable than fast roasting over high flame.

2. Ask a nearby machine shop to built a small and simple drum roaster. Drum rotation can be manually operated or machine controlled. A candy thermometer maybe installed for more accurate roasting.

3. Coffee can be roasted in stove top corn popper. Put a measured amount of coffee and roast it like popping a corn. Candy thermometer installed will give more roasting control.

Home coffee roasting is an art. Time and patience are needed to do it properly. Practice using low cost coffee beans before roasting your precious coffee alamid.
